A main problem of the severing charm would be it’s inability to be used like a specially prepared knife, as in a knife to be used for a potion. You cannot cast a different spell to change the properties of the severing charm. If caught in a dire situation and you didn’t have the proper blade to cut your ingredients, then the potion you are making could either have the wrong effects or not work altogether. Also, if the charm was unable to cut through a material, then it would have basically no use. Or, if your concentration were to wander halfway through the spell, then you could easily cut the wrong spot. Or you could even cut the wrong item altogether. A main problem could be that if cast by an experienced witch or wizard, the charm could most definitely be used in a violent manner. If cutting flesh, there is no telling how deep the charm would severe the skin. It could damage organs, or cut through veins. That would cause a lot bleeding, which would, in turn, cause death.
